Melt in your Mouth Butter Cookies

My children loves to eat cookies, I mean who doesn't? But they are picky eaters as well, especially my youngest. So on finding snacks and food to feed them, it has to be delicious and it has to suit their taste.

My daughters love the taste of butter, so I decided to make butter cookies and looked for a great recipe that is easy to make and can use up the ingredients in our pantry.

So here it is, the Melt in your Mouth Butter Cookie Recipe:

Ingredients:
3/4 cup or 1 1/2 stick of  (Elle & Vire) butter, softened, preferrably unsalted
1 cup Sugar

2 cups All Purpose Flour

1/2 tsp baking soda
1/2 tsp salt

1 large egg
1/2 tsp vanilla


Instructions:

1. Whisk together flour, baking powder, and salt in a small bowl.

2. In a large bowl, beat together butter and sugar using an electric mixer at medium high speed until mixture gets pale and fluffy. Then beat in egg and vanilla.

3. Reduce mixer to low speed, then add the flour mixture. Mix until just combined.

4. Form dough into a 12-inch log (2 inches in diameter) on a sheet of plastic wrap and roll up dough in plastic wrap. Chill dough on a baking sheet until firm, at least 4 hours.

4. Put oven racks in upper and lower thirds of oven and preheat oven to 375°F.

5. Cut enough 1/8- to 1/4-inch-thick slices from log with a heavy knife to fill 2 ungreased large baking sheets, arranging slices about 1 inch apart (chill remainder of log, wrapped in plastic wrap). If garnishing with coarse sugar, sprinkle slices with it.

6. Bake cookies, switching position of sheets halfway through baking, until edges are golden, 12 to 15 minutes total. Cool on sheets 3 minutes, then transfer with a metal spatula to racks to cool completely. Make more cookies with remaining dough on cooled baking sheets.
